Elena Bowman's Souffle -- recipe




1 cup strong coffee
1 cup milk
¾ cup sugar
a pinch salt
1 envelope plain gelatin
2 eggs, separated
1 ts vanilla

*Scald *the milk and coffee
*Mix* sugar and gelatin
*Add* half to hot liquid.

*Beat* egg yolks;  add to remaining dry ingredients.
*Add *to hot mixture.
*Cook* until mixture coats silver spoon.
*Let cool.*
*Add* vanilla.
*Fold* into stiffly beaten egg whites.
*Chill *until firm.

Souffle' results in three different color layers; the bottom one is a dark brown, the middle a lighter color and the top even lighter.  At least that's the way it should turn out.  Nevertheless, it is so good that it doesn't last beyond one meal.  There are always those who want seconds.
